Ingredients:
- 3 large egg whites
- 6oz caster sugar
- 284ml Yarty Valley Dairies double cream
- Handful of local seasonal fruits
Method:
- Preheat the oven to Gas 2/300F/150C. Place the egg whites into a bowl and whisk them until they form soft peaks. Add the sugar a little at a time, whisking after each addition. Once all the sugar has been mixed in – spoon out the mixture onto a baking sheet into a large circle.
- Place the meringue mixture into the preheated oven and then turn the heat down to Gas Mark1/275F/140C. Bake for an hour, then turn the oven off and leave the meringue inside until the oven is cold.
- Whisk up the Yarty Valley Dairies double cream to soft peaks and spoon all over the meringue – sprinkle with the fresh fruit and serve.
